    Dulang: A journey to southern Philippine cuisine

    A culinary workshop on Southern Philippine Dishes was held at Laksamana College of Business (LCB) yesterday.

    The workshop, ‘Dulang’, is part of an international food tour featuring the culinary arts and gastronomy of Muslim Mindanao. The tour visits a number of countries in Asia to celebrate the 126th anniversary of Philippine Independence and Nationhood in June this year.

    The workshop in Brunei Darussalam, organised by the Philippine Embassy in Brunei Darussalam and LCB, was presented by Chef and Gastronomy expert Datu Shariff Khaled Pendatun.

    Dulang means food prepared in a circular tray following a tradition among people of Mindanao and Sulu in the Philippines and throughout Southeast Asia. It is a meal for celebration or conveying generosity and community.

    During the workshop, Datu Shariff Khaled Pendatun shared knowledge and history on dishes within the Southeast Asian region, noting how some of them are similar yet unique.He said that while some ingredients, cooking methods or even dishes may have different names but are more similar than people think.

    The chef also demonstrated three dishes during the workshop, offering participants a glimpse of Southern Philippine culture and heritage. – Adib Noor
