Michelin awardee shares tips for budding chefs

The Ministry of Primary Resources and Tourism through the Tourism Development Department in collaboration with the Institute of Brunei Technical Education (IBTE) and Cloudstreet Restaurant, Singapore organised the first Brunei Gastronomy Workshop held virtually in conjunction with Brunei Gastronomy Week 2022.

The workshop aimed to offer opportunities for culinary students and young budding chefs to learn and further enhance their culinary skills by learning from an international renowned chef. It also strived to elevate the participants’ creativity and see ingredients to be more than one dimensional.

Seventeen participants comprising IBTE students and young chefs joined the workshop virtually, facilitated by IBTE.

The workhop saw Chef Mark Tai, 2021 Michelin-Guide Young Chef Awardee from Cloudstreet Restaurant, Singapore demonstrate the steps to make French Poulet with Spiced Turnip: (A twist on Buttermilk Chicken) into a fine-dining standard.

Chef Mark shared the fundamental cooking techniques and culinary skills such as inspiration behind the creation of dish, kitchen tips and tricks for the aspiring chefs and most importantly how to plate the dish. Chef Mark hoped to spark new ideas, and help push Brunei’s Culinary scene further towards international standards.
